4 cups ripped but hard mango (peeled, seeded, and diced)
¾ of a cup red onions (diced ½ " by ½ ")
¾ of a cup raisins
1cup brown sugar
1 cup cider vinegar
4 cloves
2 cloves of garlic (minced)
1 Serrano chili
Salt to taste
Fresh ground pepper to taste
Preparation
In a medium pot, mix all the ingredients and cook them at medium heat (slow simmer) for 15 min or until cooked but tender.
Put the mix in sterilized glass jars.
Process in a hot water bath for 10 minutes.
Once it is open, you can keep it for 1 ½ months in the fridge.
